Why Wine Needs to Be Preserved After Opening
Once uncorked, wine comes into contact with oxygen. This starts the oxidation process: aromas alter, freshness fades, and structure weakens.
Still wines (red, white, rosé) are especially sensitive. Aromas flatten, color may change, tannins lose clarity.
Sparkling wines, on the other hand, deteriorate primarily from pressure loss. As the gas escapes, the wine’s balance — its volume, liveliness, and mouthfeel — collapses.
In this case, it’s not so much oxidation but loss of effervescence that matters.
That’s why preservation must match the wine type:
- For still wines, an airtight stopper may suffice to slow oxidation.
But a vacuum pump goes further: it removes oxygen from the bottle, minimizing exposure. - For sparkling wines, a secure locking stopper is essential to preserve internal pressure.
